Key Fact: E. coli O157 is found in undercooked minced beef and unpasteurised milk; it can cause severe kidney damage (haemolytic uraemic syndrome).

Exam Tips: Learn the specific sources, symptoms, and prevention methods for each key bacterium — examiners often ask you to name a bacterium linked to a specific food. | Always distinguish between infection and intoxication when explaining how food poisoning occurs. | When discussing prevention, use the '4 Cs': Cross-contamination, Cleaning, Chilling, and Cooking. | Use precise names: 'Campylobacter' not 'campylobacter bacteria', 'E. coli O157' not just 'E. coli'.
Common Errors: ✗ All food poisoning is caused by bacteria. ✓ Food poisoning can also be caused by viruses (e.g. norovirus), chemical contaminants, or naturally occurring toxins in some plants and fish. ✗ Cooking food always makes it safe to eat. ✓ Cooking kills most bacteria, but if bacteria have already produced toxins in the food (e.g. Staphylococcus aureus), those toxins may not be destroyed by cooking. ✗ E. coli is always harmful. ✓ Most strains of E. coli are harmless and live naturally in the human gut.
